Manitaria Gemista is an easy and incredibly tasty recipe for appetizer, mushrooms stuffed with parmesan. The mushrooms must be very fresh and tight. If you want to wash them thoroughly, take care to do it soft and wipe them well, but also softly, so that they do not jam when baking.

Ingredients:

650g flat or portobello mushrooms
1 purple onion, finely chopped
2 garlic cloves, crushed
300g baby spinach, trimmed
250g low-fat ricotta
2 finely chopped zucchini
1 teaspoon finely grated lemon rind
120g baby rocket leaves
200g punnet grape tomatoes, halved 1 tablespoon balsamic vinegar
olive oil

Method:

1. Trim stems from mushrooms. Finely slash. Warmth a non-stick skillet over medium warmth. Shower with oil. Cook the onion, mixing, for 5 minutes. Include mushroom stem. Cook for 3 minutes or until delicate. Include the garlic and cook, blending, for 1 minute or until fragrant.

2. Place spinach and zucchini in a heatproof bowl. Cover with bubbling water. Put aside for 30 seconds. Deplete and flush under frosty running water. Crush out abundance fluid. Finely hack and place in a bowl. Blend in the onion blend, ricotta and lemon skin. Season with pepper.

3. Preheat broiler to 180°C. Line an expansive preparing plate with non-stick heating paper. Place mushrooms, cut-side up, on arranged plate. Separation blend among mushrooms. Cover with thwart. Cook for 15 minutes. Expel thwart and dish for a further 10 minutes or until delicate.

4. Consolidate the rocket, tomato and vinegar in a bowl. Partition mushrooms and plate of mixed greens among serving plates.
